Next door to the district support center was a rail car repair facility.  One of the cars they had in their yard was from the long defunct Ashley, Drew & Northern Railway.  This boxcar has clearly seen better days.

The facility also had the cutest little locomotive.  It's an EMC SW1 switcher, built in 1939 for the Chicago, Burlington & Quincy.  I couldn't get a good photo of it because it was always behind a row of boxcars, but here's what it looks like.

Slice 1 pound of bacon into small pieces.  If you're watching your fat, you can trim the fatty bits off, but I think that's a waste of deliciousness.  A good smokey bacon works best, but avoid anything weird like maple-flavored.  Saute for several minutes, until you've rendered the fat out of the bacon.  Drain off the fat, then add 1/2 an onion, diced, and saute until the onion is translucent.  You're not trying to make the bacon crispy, it just needs to be cooked.  Add 3 cans of diced tomatoes, well drained, 1 Tblsp Italian seasoning and 1/2 tsp of red pepper flakes (optional).  Cook until the tomatoes form a sauce.

Serve over freshly cooked spaghetti and top with grated cheese.

I'd ordered a few containers of BaconSalt before, the original, natural, peppered and hickory flavors.  BaconSalt tastes like bacon, but it is vegetarian, Kosher, low sodium, fat and calorie free. My SO used up the entire bottle of hickory flavored (it's his favorite), so I placed an order for the BIG bottle.  I also ordered some of the new flavors while I was at it: cheddar, maple, jalapeño and mesquite.

I like to sprinkle a little BaconSalt on popcorn along with some ranch dressing powder.  It adds only 5 calories!

I wandered into Cost Plus World Market today. I really should stop going in there, because I always end up spending way too much. Anywho, I was looking through the chocolate aisle when I came across a bar of Lindt Chili. Chili and chocolate, they should go together really well, so i bought a bar to try it out.

And then I saw it. Something that made me fear for the future of the human race.

Bacon.
Chocolate.

Bacon Chocolate.

BACON CHOCOLATE

BACON CHOCOLATE!!!!

So I bought some. I haven't tried it yet, I'll wait until my SO gets home from his business trip so I can share the horror with him.
